VINIFICATION
Grapes were harvested early morning at 22 °B
Very reductive handling of the grapes and juice with the aid of CO2 and dried ice
Skin contact of 6 hours was allowed
Juice then settled for 3 days at 10°C
Fermented with Lallemand R2 yeast
Fermentation took place at 12 – 15 °C over 12 days
Once the wine was fermented dry it spent 90 days on the lees

DESCRIPTION
Pale straw colour with a green tinge. Figs, granadilla and green pepper on nose and palate. A mineral mouth feel of chalk and flint retains the tight and racy finish. A crisp, zesty wine which will compliment seafood, poultry and vegetable dishes. Drink within the next 4 years.
